How to do it

  1. Divide the target servings by the original servings to get the scale factor.
  2. Multiply each ingredient quantity by that factor.
  3. Do not blindly scale cooking time, salt, spices or raising agents without checking the recipe.

Worked example

If 250 g of flour serves 4 and you need 6 servings, the scale factor is 1.5, so use 375 g.

Common mistakes

  • Scaling cooking time exactly the same as ingredient weight.
  • Forgetting seasoning, raising agents and strong flavours may need checking by taste.
  • Mixing grams, millilitres and item counts without noting the unit.

When this is not suitable

Do not treat any quick estimate as a final specification where safety, contracts, regulations or expensive purchases depend on it.
